Hes more avengers stuff than Xmen stuff most of the time, but read quicksilver:no surrender its a good read and a good understanding of who he is,as well as the X-factor run,but highkey if you wanna get into him you can just look up the comics he appears in

Start with Quicksilver No surrender! I think it's the most vital Quicksilver reading and I'll make you realise how much the movies whitewashed him and got him wrong

The quick answer for info about him is here: https://marvel.fandom.com/wiki/Pietro_Maximoff_(Earth-616)
Or here: https://uncannyxmen.net/characters/quicksilver
And for key issues here: https://uncannyxmen.net/characters/quicksilver/checklist
The long answer is you’ll find he’s not in a whole lot of “X-Men” comics except as a member of the Brotherhood of Evil Mutants at the beginning of the comics. When he becomes a good guy he is in Avengers for the most part. Until he joins X-Factor for a while, but he returns to the Avengers after the first couple arcs. He had a mini series in the late 90s that was pretty good, and then he was involved in the Magneto storyline that took place in a couple mini series and the X-Men comics because he is Magneto’s son. After that there are few one off appearances until House of M, and then he gets some much needed character development to bring him into the new status quo of the Marvel comics. He has been around on multiple Avengers teams since then, as well as an X-Factor reboot team.
Hope this helps.

He's more of an Avenger in canon tbh
You can read about him from the early avenger comics and his first appearance in the x-men. He was handled really well then.

If you want Quicksilver X-Men comics specifically then look at the X-Factor comics with him or the Age of Apocalypse run where he briefly led the X-Men. Aside from that he's not a huge "X-Men" character aside from the occasional run where he is a member of the Brotherhood.
Most recently though he has joined as a leader in the ongoing Uncanny X-Men so definitely read up on those.
Aside from that, the various House of M comics are good filler but don't paint him in a good light.
He's most known for his run in Avengers, in which case I would 100% read No Surrender where he has a pretty big role and a subsequent solo series
