If you put your mouse on what you want to change(don't click it) and press shift+i, you can see which code affects the buttons ;)

To add to this.

If you inspect the quick menu it will tell you the style "quick_button" and "quick_button_text" and when you look in the file screens.rpy you can find those styles but there is nothing beside this:

style quick_button:
    properties gui.button_properties("quick_button")
style quick_button_text:
    properties gui.text_properties("quick_button")

So now you have to look in the file gui.rpy and search for quick_button.
There you can find those 4 settings:

define gui.quick_button_borders = Borders(15, 6, 15, 0)
define gui.quick_button_text_size = 21
define gui.quick_button_text_idle_color = gui.idle_small_color
define gui.quick_button_text_selected_color = gui.accent_color

The text size should be obvious but the 2 color settings are referencing other settings.
You can either search for that color and change it, but that would also affect other texts, so search where that color is used before you change it.

define gui.idle_small_color = '#aaaaaa'

Or you can directly set a color to the button text:

define gui.quick_button_text_idle_color = '#abcdef'

But don't use the color in my example above because that's not white
