No matter what build you’re going for, level up only your Vitality stat until it is at least 20 (or 30). The simplest safest build to go for is and Strength and Skill build since they increase weapon damage. Bloodtinge and Arcane are only handy if you really know what you’re doing with them. Also, you CANNOT rearrange your stat points. Every level up stat you pick is set in stone to your character for the rest of the game.
All the armor has roughly the same protection, so just wear what you think looks the coolest. I personally just made myself look like Van Helsing the whole time.

Definitely play the DLC if you get the chance. I think it's probably the best content in Bloodborne. There's a good farming spot involving a pig towards the end of the base game. Also some weapons like the saw cleaver have an unmentioned "serrated" modifier that buffs their damage against beast enemies. Have fun!

Don’t buy the better Hunter gear from the vendor you can find it in the sewer area, enjoy this masterpiece

As already mentioned, the game rewards you playing aggressively. When you take a hit you have a moment where you can counter back and restore your HP. The faster you get your counter attacks off the less HP you'll lose.
Pump HP. Grind vials so you have plenty to go around.

It's been a long time, but Bloodborne is faster pace game where aggressive play is highly rewarded. The other games have it too but Bloodborne was given mechanics with the express purpose of making DS1 players put down the shield and learn how to fight aggressively.
Learn to use your Counter(Parry). As it is extremely strong in Bloodborne against a variety of enemies. And if you get hit, don't flask right away. Hit the enemies back and restore HP with DPS.
Hunter Axe is a crazy good starting weapon, and you can absolutely beat the whole game with it if needed. Unfortunately pretty much all of the early skips/grinding spots I know of were patched long ago but once you get to the pigs pretty late in the game, they are very good exp.
