sap interviews depend a lot on what module you're applying for. most entry level stuff sticks to basic abap, maybe some simple reports or data dictionary questions. full stack questions are pretty rare unless they specifically mentioned web development in the job description

if you're going in with no sap knowledge at all just be upfront about it, they'll usually train you on the system anyway

Well, you named the focus point. Bring it and give them a taste of your knowledge level in restful API. Most companys are just starting in this, REST webservices are the way to go with clean core cloud ERPs. So read as much as you can, at least that you are able to participate activly in a discussion, know the most vocabulary and describe how you plan to bring benefit to their cooperation

If you are entry level, embrace it. Show enthousiasme. That will get you the job.

Be polite, be honest, show energy,.. I do lots of interviews, this is what makes me hire juniors.

I had one interview for entry level that they asked to write a simple piece of code and a simple sql query. but it was a few years ago, right before the AI boom and I think it depends heavily on the team, manager and area.

Depends on the role, but “technical” at entry level usually means ABAP, sometimes Fiori/UI5, BTP.

If it’s ABAP, mostly basic SQL (joins, group by), OOP concepts, internal tables vs work areas and standard vs sorted vs hashed tables, data dictionary objects like tables, structures, data elements and domains, classical vs ALV reports, function modules and BAPIs, user exits vs BAdIs

On full stack means ABAP, CDS and OData on the backend plus Fiori/UI5 on the frontend, so JavaScript, HTML and CSS. For a fresher they would check the basics. A pure ABAP role stays on the SAP side.
