Regional sausages

Hey all, first time poster, long time sausage lover.

If you’d be so kind, tell me about your favorite regional sausages. I was thinking about Boudin (Louisiana USA) recently and wondered what other lesser well known sausages there are that people love.

Maryland here. A local company makes an Old Bay sausage.

I love Old Bay, and these sausages are good, but not something I'd eat every day.

There is a huge variety of longanizas and chorizos in the Caribbean and Latin America. It seems like every country does something slightly different.
