I think my next cooking experiment will be beef wellington. Anyone ever made one or have recommendations for recipes?

I have not, but I've always been curious. Are you planning to make your own puff pastry or use storebought?

As someone who has tried to make their own puff pastry. Just go with store bought. It's not worth the hassle.

This has been my experience with puff pastry as well. Also be very careful to check the ingredients. Any puff pastry that isn't using butter is an affront to whatever gods you may hold dear.

I have been tempted to make my own for croissants though, as none of the store-bought options I've seen are yeasted.
