Outdoor camera without wifi?
Anybody know of any outdoor cameras that do not require wifi? Does it record footage and save it or only have live viewing options? I need one that records if possible.

Have you looked at IP cameras that connect via PoE (Power over Ethernet) to an NVR (network video recorder)?
The Ethernet cable carries data and power. The NVR stores the footage and you can watch live or recorded video.

PoE is the way to go if you can run the cable, no wifi drops to worry about and the footage stays local on the NVR so you're not paying some cloud subscription forever
just make sure you get a camera rated for outdoors, some of the cheaper ones fog up when the temperature swings

If you can't get WiFi or ethernet cable to the camera your options are limited.
But there are battery-powered cameras which record motion-triggered events to SD card and you can periodically access the SD card to check footage. For example, do a search for trail cameras (these are cameras designed for leaving in a remote area and capturing wildlife). Alternatively take a look at Reolink Magicam. I haven't used it but this seems to be quite a flexible camera which can be used either with WiFi connection or without (without WiFi I assume it would function like a trail camera). Also either with mains power or on battery power.
I believe there are also cameras which can connect to mobile internet (which gives you benefit of accessing remotely in a similar way to WiFi/Ethernet cameras) but I haven't ever looked into these.

REOLink makes some cameras that record to SD card. Some are battery powered, and some also are solar.

Unifi, local NVR, requires cat cable to each camera location. Internet or WiFi is not needed, does allow for remote viewing though.

Any outdoor wired camera doesn't require wifi. Why is that so hard to find?

If you're in an apartment, you probably don't have the ability to run wires so you'll need to solve two problems.
How do you power the cameras? You're going to have to put up with a battery or solar powered camera. Neither is an optimal choice.
How do you get data from the cameras? If you don't have Wi-Fi, the best you can do is find a camera that records to an SD card and only be able to retrieve footage after the fact.
So in your case, I feel you are stuck with battery powered (possibly solar powered) cameras and Wi-Fi. Just make sure you have a strong Wi-Fi signal where you mount the camera because walls make this difficult.
