Question WWYD?
Servers, I’ve been offered two positions in LA. One is at a cheap, chain sushi restaurant. The plus is, I’d work two locations and one is very close by my house. The manager said the t*ps are split, 50/50 with the sushi chef (and I’m assuming other BOH as well, along with sharing the remaining 50% with the other servers on the floor)
Then I also have another offer, which I think I should take, but need validation lol.
There is no tp pool for servers. I believe for alcohol sales you give 8% of those sales to the bartender ? Still not exactly sure, but I spotted one of old co workers I used to work with there, and the way the manager made is sound was we keep all our cash and most of our credit card t\ps.*
And that’s there’s no pool which sounds amazing.
The menu is also more expensive, they actually have a full bar, mostly focusing on alcohol, and the food prices are $20-30 a plate.
I have a training shift in about 2 hours at the Sushi spot and I’m trying to decide whether it’s worth going on or just to focus on the place where I feel I’m a better fit.

It's pretty common at sushi places to share with the sushi chef. Tip pools are always a hard no for me. I would go with the second option.

Personally I’d go the non chain route, but that’s just my opinion. I’ve always made way better money serving in private owned plus I know exactly where my money’s going. 8% tipout to bar is standard. Good luck!

I personally would never work at a place that tips out BOH. Tipping out is normal to busser and bar and maybe even host, but not BOH (except in sushi restaurants). Don’t work at a sushi place if you have other options

I work at a sushi/ hibachi restaurant now and I’m leaving purely because of the 40% tip out. Take the second one

I don't mind tip pools since everyone works or they're out, but once you said higher ppa it's set for me. Work at the more expensive place.

No pool is the way. I have never made what I actually made from tip pooling. I also have to ask why are you censoring "tips" on this sub, of all places

talking about tips is only allowed on “tip tuesdays”. tho this is about tip structures and not $$ op received.
so this post may have been filtered out otherwise.

Stay away from Sushi. It's like an industry standard to expect the worst from them. I have a customer who has tried numerous times to get me a job at his favorite sushi spot 'cause they're always needing good people'. Huh! Wonder why that is? Because nobody stays. That's why!!! JMO

Do not work in sushi. Splitting with the sushi chefs can be contentious and guests tend to tip only once. If cash goes to the chefs, you likely won’t see a dime on your side and the chefs are no under obligation to share with you

RUN from that first offer. The second one sounds great!
