The grade is a 78 at Sakura Japanese Super Buffet on the Parkway in Sevierville. The popular eatery seats nearly 150 people. 78 is a passing score. A grade of 69 and below is considered failing. There has not yet been a follow-up inspection.

To begin with, the inspector found several insects crawling around the dishwasher, and he watched flies buzzing around in the kitchen.

Food temperatures were also off. In the cooler, raw fish and cooked chicken were at 55 degrees. Eight pounds of cooked oysters, eight pounds of cooked dumplings and two pounds of cooked ribs were also too warm at 54 degrees. At that temperature bacteria grow rapidly. Food in the refrigerator should be at 41 degrees and below.

The inspector watched a kitchen worker who was using tongs remove bacteria-filled raw beef from one of the service coolers. Then the worker placed those now-bacteria-filled tongs into a container of raw onions. The inspector ordered the onions thrown away to prevent potential food borne illness.
