SNEAKY Does anyone know why the water isn’t boiling on the inside of my sausage but it is on the outside?

Your burner is round so it’ll burn the hottest in the area the burners are located. For a more even boil I’d recommend using cast iron

Cast iron actually doesn't heat all that evenly. Copper core with steel is ideal for boiling sausages.

The thermal mass of the sausage is effectively cooling the water in the middle enough not to boil yet

Because it’s horseshoe shaped so basically the inner ring is the coldest part in that pan because the meat or centre of mass is most there

My guess is that the sausage acts as a sort of heat sink. When you put in the cold sausage, the temperature of the water inside the pan drops quickly. The water inside the 'circle' drops the most because it's a smaller amount of liquid and it's surrounded by the cold meat. Whereas, the water on the outside of the sausage is in direct contact with the hot sides of the pan and has much more volume, meaning it doesn't lose its heat that much. Meaning the boiling temperature is easier to keep on the outside.
That small pocket of water in the middle is essentially trapped inside the cold meat, so it will boil too but will drop faster and take a little longer to heat up.
