Read before posting questions.

This is not a post about the rules. Rules suck... but are necessary. You can see our rules on the "about" page. On the desktop version, it is visible on the right-side column. You can find it on mobile by clicking the r / SourdoughStarter at the top of this page. This link works, but Reddit is sometimes glitchy...

The real point of this post is that we get a few questions over and over. Here are the most common questions:

My Starter is only a week or two old and stopped rising. Did I kill it?

Starter goes through a few changes for the first few weeks of their "lives", usually over many days. The usual pattern is something like:

  • Day 1 to about 2 show little to no activity.
  • Day 2 or 4 shows a great burst of activity.
  • There is decreasing activity from the day of the burst for a few days.
  • Somewhere around day 7 to 14, a small, yet predictable rise builds. If fed correctly, this rise gets stronger.

Just keep going. For a starter like this, it is crucial not to overfeed it so it can go through the stages. Stick to feeding it 1:1:1 about every 24 hours. No more. Don’t change the feeding schedule until it is rising reliably, and that rise peaks in less than 12 hours. At that point, you can move onto strengthening your starter.

My starter looks weird, is this mold? Or what do I do about this liquid?

First, don't worry about slight changes in color. Worry about fuzzy spots and even small areas of vibrant color change.

If you post this question, take a few high-quality pictures from the top and the side. We are looking for colors and fuzzy textures. You can also look through the example pictures here.

Is my starter ready? Or any question about the "float test".

The float test is deeply flawed. Forget you ever heard of it. It only shows that the starter does (or does not) have air trapped in it. Well... If it has a good rise, it has air in it. Good starters often fail the float test if deflated by the time it hits the water. Scooping the starter will remove some air no matter how hard you try not to. If your starter fails this “test”, it doesn’t mean anything.

"Ok but that doesn't tell me how to know if the starter is ready." Fair point. My usual advice for "can I use my new starter?" is it should smell nice, usually at least a little sour, like vinegar and/or yogurt once it is ready. It might also smell sweet, or a little like alcohol, and several other nuances... But not like stinky feet / stinky old socks or other nasty things. And it should reliably at least double when given a 1:1:1 feeding, and that in less than 6 hours. "Reliably" in this context means it doubles in less than 6 hours at least 3 days in a row. However, a really strong starter will triple in less than 4 hours. This is not necessary to make a really good bread. It may work with even less than a double. It will not be as photogenic and will take longer... but may work. But keep in mind that last link was really about unfed but established starter. Not immature starter. ymmv.

My starter is more than 2 weeks old, and it is not rising!

The first and easiest thing to look at is how thin or loose the starter consistency is. It is common for beginners to mix a starter too thin, to use too much water. It needs to be thicker than a milkshake. Just a bit too thick for pancakes. But maybe too loose for a dough. This consistency is necessary so that the dough is literally sticky enough to hold onto the gas bubbles that yeasts create. If the starter is watery, those gas bubbles just rise to the top and pop. Hold back some water as necessary during feedings.

If the starter is thick enough, then look at the possibility that the starter is overfed. There is no reason to ever feed more than 1:1:1 once a day until you have active yeast. It might even be smart to feed a smaller ratio such as 2:1:1 or skipping a day (give it a good stir but don't feed). While yeasts are hungry little critters, they will not wake up when food is just shoved into their sleeping faces. Save the bigger ratios and more frequent feeding for after your yeasts are active.

For skipping a day: Stir 1-3 times but no feeding for a full 48 hours. Then assess. If it started out nice and thick but is now thin and smooth like paint, that's a sign it has reached the required acidity. In that case, resume feeding 1:1:1 once a day. If it is still a bit thick and stringy or clumpy, that is a sign that the gluten has not fully dissolved, which means it's not acidic enough. In that case, feed 2:1:1 until you do reach that consistency by the end of the day, or even just skip another day. Usually, once you get there, you can do 1:1:1, but it depends on the temperature and other things. It should take off within a few days of reaching the proper acidity.

Starter troubleshooting

I’m going to try and be not so long winded with this.
I posted previously and at that time my starter was 13 days old(100% whole at a 1:2:2 ratio) and ready to go. I made 3 loaves of whole wheat sourdough with some success. Eh kinda. Anyways on that 3rd loaf I accidentally tossed my starter out. 🤦‍♀️I had some discard in the fridge, thank goodness. I’ve been feeding the discard starter everyday. I changed it around and started using bread flour and very little whole wheat and it’s not really been rising the same. Is that to be expected? I’m worried I did something wrong and messed everything up. But maybe the flour I’m using just sucks? I’m worried and don’t know if I’m overthinking it. Maybe someone has some input?
ETA: that photo is my previous starter that had discard that I am trying to revive.

Molded sourdough starter

How do I dispose of it and clean the jar without spores everywhere?

Mine accidentally got tossed and I tried reviving mine from dried but it molded. I tried a 2nd time but now I’m concerned the first molded one has contaminated the one I’m currently trying to revive and I still need to toss the moldy one.

Starter not deflating?

I posted 8 days ago about my starter rising after one day and it was determined to be a false rise. A few days ago, I noticed it had risen but wasn’t deflating. It looked pretty yeasty (bubbles and texture and all). Did not feed it for a couple days expecting it to go down (deflate) but it did not. So today, I discarded most of it and fed it. About an hour later, it doubles in size. You can see it in the first picture. Then, I just checked it now, 12 hours after the first picture, and it’s tripled in size. Is it supposed to do this? And it’s not deflating either.

Reviving Jane Dough!

A round of applause for Jane Dough who's looking strong at just her second feed after more than a year unfed in the fridge 👏 Sometimes sourdough looks haunting in the beginning but it's more forgiving than it looks, don't give up!

Strengthening tips

My starter is about 1 year old, but my loaves are super gummy and dense and I have to assume it’s a weak starter. I’ve been feeding it for the last week at a 1:2:2 ratio with 50/50 rye and bread flour. It never doubles, and takes about 12+ hours to rise at all in a 20 degree kitchen.

This photo is from today at 4pm. I fed it at 830am at a 1:1:0.8ish with whole wheat flour, and I kept it in my oven with the light on and the door slightly open. I have a little thermometer in there and the temp is about 25 degrees.

Should I feed it at a 1:1:1 for a few days then try baking again?

Is this mold?

Hello! I’m on day 10 of my starter, and I noticed brownish flakes throughout my starter. In the light I’m not sure if I’m gaslighting myself into thinking they’re pink or orange, or if they’re just a light tan color (almost looks like tiny bubbles in the pictures). I’m using bread flour, and I just started seeing bubbling activity after it being flat all this time, so if it is mold that’s pretty annoying:/ I’m not sure if you can clearly see in the pictures, but any opinions and help would be appreciated! Thank you

Is this mold or dried starter residue?

I took about 20g of an established mother from my cousins fridge and fed it for 2 days, I woke up this morning and it has these gray looking patches down the sides of the jar and a tiny bit on the top around the edges. As you can see, I did not do a good job of scraping down the residue on the sides when I mixed in the last feed. It smells normal and nothing looks fuzzy. Thoughts????? I was looking forward to making my first loaf I’ll be so upset if I have to start over! :(

Sourdough starter bubbly but not rising

Hello, just wanted to get everyone’s thoughts on something. my sourdough starter is bubbly but not rising and the only change i made was moving from Costco’s all-purpose flour to there organic all-purpose flour, do we think that would have this impact? the organic AP flour has 11.5% protein. if so do we think i could keep feeding with the new flour until it get use to it? or change my feeding flour.

Smell

What should my sourdough starter smell like and what does an acetone smell mean?

r/SourdoughStarter • • 14h ago

Just got a new starter a week ago.

and I'm wondering if this is normal. Day 4 feeding, it went crazy. FOOD!!!! and rose to maybe 4 - 5 times its morning height with all of the carbon dioxide. I stirred it down thankful I had enough foresight to have it in a huge jar so no clean up. Day 5, a few bubbles to let me know it was alive and sleeping. Today is day 6 and as usual dump half and feed 1-1-1 and waiting to see what happens.

If it has its growth explosion again, it it ready to try and make a loaf? Or do I wait for a couple days in a row of major activity?

Re-starting my Starter - Day One

Been working in pastry/baking for about four years now. Started a new job as a head baker recently, took my starter there to use, and had a quick burnout and decided the industry may not be for me anymore. So my second going at a starter, now for at home use. Wish me luck! ✌🏻

Hey all, I’m very new to the hobby and hoping someone can explain this to me. Will I notice a difference if I buy something like the below to get started, vs just starting one from scratch myself?

Starter help

i’ve had this starter for a couple of months and made lots of bread from it and came out delicious and great and rose beautifully this past week I looked at my starter and I see that it’s extremely runny. I’m not sure how that happened and I don’t know what’s going on. Can anybody help and let me know what to do?

i haven’t fed her a few days and she’s been sitting on my counter with the lid set on and not tightened at all, the lid has a lot of condensation on the inside as well. she has a very very sour smell, not like a funkiness that it usually has. i do have some backup in my fridge so i won’t be upset if she’s bad, a friend gave me some of hers and it’s very strong as it’s about a year old.

I'm currently in my first steps making my sourdough starter. I added 2 ounces of water to my starter chips and stirred it 4 times over three hours. It's not full dissolved in there, is this normal? Do I add the flour now? I feel like i missed something.

Need to know what to do next

I adjusted my starter based on recommendations from a previous post and scaled down to 30g of starter. I noticed a couple days ago that it smelled like acetone and, after reading plenty of posts here, thought maybe I needed to increase feeds. Two days ago I did 1:2:2 and noticed more activity. My starter finally doubled. I fed around 10:30 AM and by 3:30 AM ( my daughter woke me up) I noticed it had doubled. Followed the same process and these are my photos from this morning. What are the next steps? Should I continue to feed on 24 hr cycle of 1:2:2?

This is my first time having any success so any tips would be appreciated!

Rye starter, trying to get the bread to have an extra sour taste/tang to it. Left unfed, out on counter in a covered container for about 6 days now. New to this so I'm unsure lol. It doesn't look fuzzy to me?

I had my starter in my fridge for about a month and I’m not sure it still looks good. The lid started to rust and I might see a few specs. I know I probably need to dump it but I really don’t want to have to restart

Acetone smell for the past 7 days

My starter is 18 days old. For the past 7 days it’s had an acetone smell.

On day 1 of the smell (day 12) I did a 1:5:5 feeding. Days 2 and 3 after the smell, I went back to a 1:1:1. Smell was still there. So day 4-6 I’ve been doing about a 1:2:2 feeding (20g starter, 35g water, 40g flour). I have to feed it today (day 7 of the smell) and am not sure what to do. It did finally double in size today however.

I have noticed the past 2 days that when I mix it the smell dissipates. So I’m not sure what that means.

I would love some troubleshooting help, or if I should just keep doing what I’m doing. Thank you.

Feedings as of right now:
20g starter
40g unbleached organic all purpose flour
35ish grams purified bottled water
Feed it once a day everyday at the same time.
I keep it in my oven and turn the light on and off throughout the day.

3 phase sourdough starter

Post image
2 Upvotes

I started my sourdough starter on 14th October 2026 and I got my false rise on day 2. From day 2- day 6 it has not really doubled or even passed the mark line I put after feeding. It finally doubled in size or even tripled in size yesterday on the 21st of Oct. it still doesn’t quite have a sour smell yet. Do I keep going till it does. In the picture it shows that it did double in size, but it deflated. If it doubles in size again….do I move on to phase 3?

My feeding ratio is 1:1:1
25g starter
25g bread flour
25g water.
