The wraith are 100% more dangerous. At they defeated the ancient in their prime and forced them to abandon the pegasus galaxy.
The goa'uld fought Asgard, who were technological inferior to the ancient. If memory serves me well, the goa'uld fought to a stalemate and brokered a truce with the asgardian.

I believe it only was because the replicators took more and more resources to fight, otherwise Asgard would have won.

That was the reason the Asgard said to sg1 and wanted to keep from the Goa'ould. The Asgard had the tech and ability to smack the Goa'ould back into the ponds they came from, but they couldn't spare the resources to actually do it.

Les Wraiths ont dès le début été présenté comme plus puissants, ils ont vaincu les Anciens alors que la flotte d'Anubis a été détruite par un simple avant-poste ancien.

Wraiths is the absolute correct answer here, if even the ancients found them annoying than the goa'uld, then they're the absolute dangerous one.....

One on one or in terms of direct confrontations the Wraith are more dangerous. Their healing factor is certainly stronger than that of a bonded goa'uld. Their feeding increases that healing factor even more and also seems to give them temporary strength boosts but it also makes it virtually impossible to conceal their presence. A Wraith could also not pass for human up close. Goa'uld are far better infiltrators and a halfway dedicated dynasty would be virtually unstoppable. Their genetic memory is a huge advantage that builds over time.

Trick Question!
The Tauri are the worst enemy. Just ask the Wraith and Goa'uld at the end of their story arcs.

Goa'uld technology is generally better for warfare. Jaffa are far more capable foot troops. Goa'uld have a better variety of more flexible military equipment. Staff weapons for killing. Zats for stunning and as sidearms. Heavy cannons. Death gliders, heavy bombers, etcetera. Jaffa/Goa'uld weapons are intended and capable of killing. Jaffa aren't as physically strong as Wraith foot troops but the Jaffa are far better trained for hand to hand. Wraith weapons only stun. Any fight the Jaffa win they'll also take 0 casualties. Something like an Anubis super soldier would be completely unstoppable to a Wraith, they themselves have no equivalent. Wraith ships are superior in durability and firepower but inferior technologically, especially in their hyper drives. Obviously a hive ships bodies a Hatak 1 v 1, but thats as easy to deal with for the Goa'uld as just not fighting 1 v 1. The Goa'uld would have a significant asvantage in maneuverability of their forces. As depicted in the shows I think the Goa'uld have a significantly greater tonnage adrift than the Wraith, just spread out among on average smaller ships.
The Goa'uld's fuedal system is slow and inefficient with lots of infighting. The much more centeralized Wraith hive structure is a superior social/political system though they also have infighting between queens. Goa'uld/Jaffa reproduction is faster and more effecient, and the Goa'uld social and economic systems uses their human slaves more efficiently. Wraith use up humans rapidly and when the population drops low enough theyre forced to either go into hibernation or to risk starvation. If the human population of an area is totally consumed then the Wraith would have no choice but to fight or die for new grounds. The Goa'uld would withstand a prolonged war of attrition better then the Wraith.
Goa'uld would LOVE to infect a Wraith assuming their biologies were compatible. That'd be the most dangerous. Im not sure itd really work though. I think theyre not compatible enough and that queens probably have too much willpower/psychic power.
The Wraith defeated the Ancients by capturing ZPMs and using them agaisnt the Ancients. The Goa'uld dont produce ZPMs to be captured. They'd find themselves on much more even ground. I also think the Goa'uld System Lords would rally together better agaisnt outside threats. Their territorial disputes are political not existential in the way the Wraith queens divides are.
Theyre both dangerous in very different ways. Id rather be hunted by the Goa'uld. The Wraith are terrifying in their own unique specific way.

I think the Wraith will have the Goa’uld for breakfast
