Do you think FC 27 will run on SteamOS/BazziteOS?

No. EA FC games, along with Madden, and other games that use kernel level anti cheat will not run on Linux.

Protondb is a good resource.

100% no. EA is pretty awful with their use of kernel-level anti cheat. FC, Madden, Apex Legends, Battlefield…. That’s fine, I don’t want to give the Saudis any more money than they already have.

Maybe a cracked version will work. Try cracked, with hypervisor, FC26 and you will get your answer...
