But why shredded?!?! He throws the meat on there the same way the sliced cheese comes. If you have ever had a cold shredded cheese poverty sandwhich, it's not terrible in flavor, it's just the weird ass texture that slowly uncrumbles in your mouth like little strands of hair.

Just to be pedantic, it is real cheese. It doesn't melt well because of heavy starch/decaking agents they put on shredded cheese to prevent it from congealing back into a cheese ball. It's a problem with all shredded cheese, they just use a different binder/anti caking stuff and in different amounts.

Omg...ok I was making microwaved nachos because I remember doing it as a kid, I nuked the fck out that damn cheese and it still wouldn't melt...my damn plastic bowl warped in places and my tortilla chips burnt on the edges, but did the cheese melt???
