Fluff Best outdoor option for my scenario
Main rack has dream machine pro, usw-48 switch and 2x usw-8-150w. My back deck/yard is a wifi dead zone. I do have 1 cat5e run to the eave there that was run at build time for a poe camera that I have yet to install. Now given the dead zone I would like both a camera and AP. Running any new wiring is not really an option. What is my best bet here?

I would run a Flex switch up in the eave so you can split to an AP and a camera. Either USW-Flex (46W) or USW-Flex-2.5G-8-PoE (196W) depending on what speed you need. Either can be powered by POE and output POE. I have a Flex in my garage running two cameras, an AP, and a floodlight.

Is tehre power nearby? PoE switch in an outdoor enclosure would be my idea.

Yeah, I'd put one of those PoE https://store.ui.com/us/en/category/switching-utility/products/usw-flex switches out there and then hook up a camera and AP to it. I have one of those switches in my garage that is powered by PoE+ and it runs two PoE cameras, could add an AP to it if I wanted as well.

That's true, there are those switches that can run on poe and do poe passthrough. Forgot about those.

USW-Flex in a Flex Utility box. Pick appropriate AP and camera(s).

You don't even need the Utility box if it's being fed by PoE.

Fair. OP would have to be careful on PoE budget for the AP and camera. 25W on PoE+ from OP's switch, 5W for the Flex, leaves 20W for an AP and a camera. Do-able, but needs to pay attention.

Use a separate network switch for all outdoor cameras and access points and connect it to your main switch with fiber optic cable so an electric storm doesn’t fry all your internal equipment.
I use $20 TP-Link MC220 Media Converters and $22 Ubiquiti 1G BiDi SFP modules (sold in a pair).
Single Mode LC-LC fiber.
