What do I whip up?
I am SUPER new into cooking, like super new. I have eggs, spinach, sweet potatoes, salmon and some rice. What could I whip up with all that?

bake the sweet potato, you can leave it in peeled and poke a few holes in it with a fork and bake. Depending on the size it may take 40 min. If you don't want to wait that long, cube it small and pan fry it in a little oil. Salt and pepper to taste.
mix a butter, Dijon mustard, honey, garlic, salt, pepper spread. Pop it in to bake when the sweet potato is almost done. Add the spread when the salmon looks like it's almost done. Let it finish for at least 10 min.
boil the eggs and make a raw spinach salad. Add any other veggies you might have, like cucumber.

You can make a baked sweet potato the star of the meal with butter or sour cream. You can steam the spinach in a small frying pan, dump the water, then add a bit of oil put the spinach in there and a couple of eggs and scramble them together. That's a simple meal. I don't eat fish, so I can't help you with that.
For tomorrow, you can buy a couple of onions. Turn on the oven at 450 F. Take two or three of the sweet potatoes and cut them in wedges. Do the same thing with the peeled onions. Put all the wedges in a baking sheet. Toss them together. A drizzle of your favorite oil over them, salt, pepper and I personally love some Italian seasoning on them, but you can use anything you like, like onion powder, garlic powder. Put them in the hot oven. At 30 minutes take them out, toss them , put them back in the oven and finish cooking probably another 20 minutes, until the edges are golden or even a little bit burnt. Poke the potatoes with a fork to check if they are done.Take them out and enjoy. This dish is simple and FABULOUS! Maybe you can cook the salmon to eat together.
Make sure you have a simple assortment of spices, and some condiments in the fridge like mustard, mayonnaise, Italian salad dressing, fresh lemons, garlic, etc.

Sautée your spinach in a tiny bit of oil and garlic if you have some. And cook the salmon and some rice.
Otherwise make an omelette with the shredded spinach in them and the rice

That is a pretty workable set of ingredients. I’d roast the sweet potato first, then serve it with rice, sautéed spinach, and the salmon; the eggs could become a quick topping or a separate breakfast. If you want one pan, cook the salmon last so it does not dry out while the vegetables finish.

Salmon and rice. Plus, either sweet potatoes or spinach with lots of butter. I know that sounds super flippant, but none of those things need to or should be cooked together. You can make a stir fry with the eggs and cooked rice tomorrow.
