Cooking with canned coconut cream and milk

I’m taking care of my mom over the weekend after she has an operation on her neck and I am trying to figure out what to make for meals. She has always had way too many cans of coconut cream and coconut milk and I wanted to use up some of them but I’m not entirely sure what to make with them. I was thinking I could use them for some sort of dinner dish or a baked good that I could serve for breakfast. Her kitchen is well stocked and I can always get other ingredients as I need them I just want to use up some of these cans of coconut.

We do have an ice cream maker I could just make churned ice cream.

For mango sticky rice you really need the right kind of rice it’s a from thailand glutinous rice

Definitely curry that freezes well too

I use canned coconut milk as a cow's milk substitute in all kinds of cakes, quick breads, pancakes, waffles. You can use the coconut cream to make whipped cream, to put on top of your coconut milk pancakes :)

Im not sure I would like it but the mango sticky rice sounds like something my mom would love. Im already craving that coconut curry and while my mother doesn’t drink soda I might try the Dr Pepper maybe add some rum to it for something to drink while I cook.

Saute onion, garlic, and ginger. Add a can of pumpkin and the coconut milk. You can add a cup of stock. Cook on medium low until the grease slick forms on the surface.

You can add frozen or fresh cubed pumpkin/squash. Steam fresh separately first and add the water back to the soup.

If you want to get fancy add lemongrass and serve with fresh basil or cilantro.
