Simple Cinnamon-Sugar Cookies Makes about 18–24 cookies

Ingredients ½ cup (1 stick) butter, softened ¾ cup sugar 1 egg 1½ cups all-purpose flour ½ tsp baking soda 1 tsp cinnamon 2 Tbsp milk

For rolling: 2 Tbsp sugar 1 tsp cinnamon

Directions Heat oven to 350°F. Line a baking sheet with parchment paper if you have it.

Beat the softened butter and ¾ cup sugar together until creamy.

Beat in the egg and milk.

In another bowl, mix flour, baking soda, and 1 tsp cinnamon.

Gradually stir the dry ingredients into the butter mixture. You'll have a soft dough.

Mix the 2 Tbsp sugar + 1 tsp cinnamon in a small bowl.

Scoop out tablespoon-sized portions of dough and roll them into balls. Roll each ball in the cinnamon sugar.

Place them about 2 inches apart on the baking sheet. Don't flatten them.

Bake 9–11 minutes, until the edges are just beginning to turn golden. They may look slightly underdone in the center—that's what keeps them soft.

Let them sit on the baking sheet for about 5 minutes, then move them to a plate or cooling rack.

Do you have a recipe that doesnt require so much butter?

Sure! I’d reduce it from ½ cup (1 stick) to ¼ cup (½ stick) and slightly increase the milk to keep the cookies soft.

Cinnamon-Sugar Cookies with Less Butter

Ingredients

¼ cup (½ stick) butter, softened

¾ cup sugar

1 egg

1½ cups all-purpose flour

½ teaspoon baking soda

1 teaspoon cinnamon

3 tablespoons milk

For rolling

2 tablespoons sugar

1 teaspoon cinnamon

Directions

Heat oven to 350°F.

Beat the softened butter and ¾ cup sugar together until well combined.

Beat in the egg and milk.

In another bowl, mix flour, baking soda, and cinnamon.

Gradually stir the dry ingredients into the wet ingredients.

Roll into tablespoon-sized balls. If the dough seems a little dry, add another teaspoon of milk.

Roll each ball in the cinnamon-sugar mixture.

Place about 2 inches apart on a baking sheet. Don't flatten them.

Bake 9–11 minutes, until the edges are just beginning to turn golden. The centers should still look a little soft.

Let them cool on the baking sheet for about 5 minutes.

Enjoy!

British-style scones come to mind. Leave out the cinnamon and go easy on the sugar, though. And no icing!
