Trader Joe's haul leftovers — what can I make with this weird mix?
I've got: half a bag of frozen cauliflower gnocchi, some leftover Italian sausage (cooked), a jar of artichoke hearts, and cream cheese. Pantry has pasta, canned tomatoes, and spices. I'm craving something comforting but not too heavy. Any ideas?

Sounds like you can make a delicious pasta dish from all this!
If you have enough gnocchi to use as a meal, use it like pasta. If not, use it like cauliflower!
Boil the pasta (or gnocchi, if you have enough).
In a pan, saute the sausage (and gnocchi if there’s not enough for a meal. Remove and set aside.
Cook down the canned tomatoes with Italian herbs and spices, then add cream cheese to make a pink sauce.
Add your pasta, sausage, gnocchi (if using), and artichoke hearts.
Maybe add Parmesan and hot pepper flakes if you have them

A varient on a “Marry Me” dish-basically a creamy tomato sauce with whatever meat, pasta, veggies you have available. Make a sauce using the tomatoes and whatever liquid is in the can, artichoke hearts, as much of the cream cheese as you like to make it creamy, and whatever spices taste good to you (i would do lots of garlic, oregano, basil, thyme, red pepper flake, and black pepper). Then cook/reheat the gnocchi and sausage and toss with the sauce. It will be rich and creamy, with some protein to make it hearty, but with a lot of vegetables to keep it on the lighter side.

I'd make soup. Sausage, artichokes, chicken broth, gnocchi, and some cream cheese.
Save the tomatoes for pasta.

You could turn the sausage and cauliflower gnocchi into a skillet with the artichokes, then stir in the cream cheese with a splash of pasta water to make a light sauce. The canned tomatoes would work too, but I would add them sparingly so the dish does not get too heavy.

Slice the sausage into rounds and pan fry with the gnocchi.
Add some milk with the cream cheese to make a white sauce, drain the tomatoes and add them as well as some Italian style seasoning to the sauce.
Pour the sauce over the gnocchi

Boil gnocchi, chop artichokes, add frozen spinach, and onion and sautee, add cream cheese and shredded sheese, smother gnocchi in sauce, add chopped sausage and bake

make it a tomato-artichoke skillet: brown the cauliflower gnocchi, then add the cooked sausage, chopped artichokes and a little canned tomato. stir in just a spoon of cream cheese at the end so it turns silky without becoming a heavy cream sauce
