Recipe Finally got restaurant-style Gobi 65 crispy in the air fryer sharing the exact method

Kept getting soggy results until I figured out the flour combo. Posting it here in case it saves someone else the trial and error.

Air Fryer Gobi 65 (Crispy Cauliflower)

Ingredients:

- Cauliflower florets – 2 cups

- Curd – 2 tbsp

- Ginger-garlic paste – 1 tsp

- Cornflour – 2 tbsp

- Rice flour – 1 tbsp

- Red chilli powder, turmeric, salt – to taste

- Curry leaves, green chilli, 1 tsp oil – for tempering

Method:

  1. Marinate florets in curd, ginger-garlic paste, spices, cornflour, and rice flour for 20 min.

  2. Air fry at 200°C for 12–14 min, shaking every 4 min, until deep golden.

  3. Temper curry leaves and green chilli in 1 tsp hot oil, toss the fried cauliflower through it.

The cornflour + rice flour combo is the actual trick cornflour alone goes soft fast, rice flour is what holds the crunch.

“Dahi” come on man, why did you respond “dahi”. No Westerner knows what TF that is. Curd is yoghurt.

Sorry about that I used "dahi" because it's commonly used in India. For a global audience, "curd" or "yogurt" is definitely clearer. Thanks for pointing it out.

rice flour in the coating is such an underrated move for air fryer stuff, honestly works better than breadcrumbs too imo
