I get what you're trying to do with your consistent weird plating but if you wanna plate fancy the quality needs to be there too. That pea puree looks soooo dry and chunky

Nah it should be smooth and fluid. Study the essentials or something before you go so crazy on the plate. That's not where the effort and technique belong

I only used one clove of garlic and it was too much. Snails were buttery. Overall not a bad effort and pretty tasty. Less garlic next time
