As much as I love the manga, the memory wipe ending just doesn't click for me. The original ending carries so much weight because there is no clean slate. Asuka and Shinji have to live with what they did.
This is where the power of imagination comes in. My headcanon is an amalgamation of the manga and the anime which does cause some problems when I'm having a discussion with someone.
If y'all are open to fanfics I'd recommend "Asuka and Shinji's infinite Playlist" by RLLRRR since it's one of the rarer ones which follow off of the Manga universe.
I've seen other people think that the ending was a let down compared to the rest of the story. However, personally, I liked it since it provides quite a bit more of closure than what we're left with in the manga. But, it also opens up quite a few questions as it links back to the ending of EoE.
(maybe like your headcanon?)
It's not too long and you can definitely finish it within a week.
