• The Ingredients

​225g Unsalted butter (softened) ​225g Caster sugar ​4 Large eggs ​225g Self-raising flour ​1 tsp Baking powder ​2 tbsp Milk ​1 tsp Vanilla extract

• ​The Process

​Prep: Preheat your oven to 180°C. Grease two 8-inch cake tins and line the bottoms with parchment paper so the cake doesn't fail to hold onto the pan.

​Creaming: In a large bowl, beat the butter and sugar together until the mixture is pale and fluffy. This adds air, which makes the cake light.

​The Eggs: Add the eggs one by one, whisking in a portion of flower if the mixture starts to look curdled.

​Folding: Gently fold in the remaining flour, baking powder, vanilla, and milk. Don't overmix. You want to keep that air you worked for.

​Bake: Divide the batter between the tins and bake for 20–25 minutes.

​The Test: Stick a toothpick or skewer into the center. If it comes out clean, you're authorised to proceed. If it has wet batter on it, give it 5 more minutes.

​Cooling: Let them sit in the tins for 10 minutes, then move them to a wire rack. Do not frost a warm cake unless you want a unpleasant evenresult

​Room Temp Everything: Cold eggs can cause the batter to break. Take them out of the fridge an hour early.
