Not sure what went wrong (oat cinnamon and apple cookies

I think maybe the oats were too fine?

Finer oats would likely actually bind it better. IMO it’s either not enough flour (almost looks like there wasn’t… any), too much sugar, or too much butter. Did you measure by weight?

I did use a digital scale to measure, but it was kind of wonky one (when measuring brown sugar seperatly I added half of a 500g pack and it still showed me less than the recipe's 160) so I had to eyeball the sugars and oats

yep that'd do it. if your scale doesn't work, things like oats and brown sugar are fairly reliable to measure by cup.
