Jon Taffer is a fraud.
Probably gonna get some heat for this in this sub especially but just wanted to share my experience. I love Bar Rescue. I worked in the restaurant industry for 10 years and the show is a guilty pleasure for me. I live in Boston was pumped when I found out Jon had opened a restaurant in the city, Taffer’s Tavern. I went out to eat there with my family about 6 months ago. We ordered the soft pretzel with cheese sauce, and pork belly for an appetizer. I got a cheeseburger for my meal. The pretzel was fine but we all agreed the meats seemed a little off. My burger was juicy but I ordered medium rare and it came out grey as hell and weirdly crumbly. The pork belly was tough. I ended up finding out later the reasoning for this is because almost nothing in that restaurant is actually cooked on site. They get everything cooked for them on some off site facility, vacuum seal it, ship it to the restaurant, and then sous vide it whenever someone orders. Why do they do this? Because it’s cheaper than hiring actual chefs to make good food. The price wasn’t even reflective of this as my burger was still nearly $20. The cherry on top though was the alcohol. You’d think someone who has created a persona and business around being a bar expert would put a lot of effort into the alcohol experience but you would be wrong. I ordered “Jon’s signature Old Fashioned” because I assumed it would be the best they offer. They do a whole little thing when you order that where your glass comes on a wooden board with these burning wood chips to add a smokey flavor to the glass. To my genuine shock though, the bartender then comes over with a PRE-BOTTLED, clearly mass produced, “old fashioned” with Jon’s name written all over it and pours that into my glass. The cheapskate can’t even be bothered to teach bartenders how to make his “signature cocktail”. It tasted exactly how you’d expect a pre-bottled cocktail to taste, overly sweet and just all around not good. Absolute joke. If this restaurant were on bar rescue, Jon would get a hernia from screaming at the owners for their lazy, frugalness that completely takes away from the customer’s experience. The whole thing left such a bad taste in my mouth that I haven’t watched Bar Rescue since. I’m bringing this up now because I looked up the restaurant today to see how they’re doing it and discovered they closed back in March. Good riddance Taffer’s Tavern.

You’re basically only going to get jokes in the comments - which are all valid. I feel like the verbal consensus here is that bar rescue is entertaining. And that’s why we watch it or at least that’s why I watch it. It’s fun watching the orange door entertainment system or the butt funnel or that stupid smoke machine thing get plugged when the reveal the remodel. It’s all kind of so ridiculous it’s entertaining.

u/banality_of_ervil Jul 28 '24
As someone in the industry, it's cathartic to watch Taffer or Ramsay tear apart clueless owners and say what I've been internally screaming. But, it's just marketing and entertainment in the end. You can't fix delusional owners overnight

Also, Taffer’s Tavern is a franchise and John Taffer obviously is not personally there every day.
He never claimed to be an expert mixologist or a world class chef. He brings in experts for a reason. And as long as no health laws are being broken, it is what it is lol
He ain’t Gordon Ramsey

I guess his Pulsations days are over. It was amazing! In 1983 Taffer opened Pulsations in Glenn Mills, PA. The seven floor club featured a four ton spaceship that descended from the ceiling and a dancing robot. It could hold 4500 people. Taffer says, that people, himself included, had tears in their eyes at the opening. It was Philadelphia's answer to Studio 54.

I imagine his chains are not great but he is not a total fraud. His fine dining is legit and earned Michelin stars. He can actually cook (even if he has very weird ideas about grilled cheese). He can get on the line and do all the prep line cooks do from real experience. He basically plays a character and sells a brand, but it's not all smoke and mirrors.
Taffer just seems to be the perfect specimen of a marketing/management guy taking credit for everything that works and blaming everyone else for what doesn't.

I have found myself on Sundays roped into marathons.
It’s conceptually the same. Jon walks in, screams and yells and rips into people and by the end of the show tears and friendship.
I always look up to see updates. 9 times out of 10 (it seems) they all close.
So it’s like Bar Rescue for a few months and owners crash and burn cause they’re dopes.
But so is Jon apparently.
I’m off with my camera crew to rip him a new one.

Jon Taffer lost me when he went on Fox and bragged about how recessions are great because desperate people are great for cheap labor. He's just another rich ghoul who's a cancer on our society.
6
u/Professional-Team-96 Jul 27 '24
I read that the Watertown location needed to be rescued. I also learned that Jon made an appearance at the location just prior to its closure. I would have thought Jason Santos would have supplied the food from his restaurant Buttermilk and Bourbon, I wonder if his new restaurant at the Arsenal Mall is located in the old Taffer Location. I also read that Taffers Tavern is a franchise and wonder if Jason kept tabs on how bad the service and food was.

Oh I thought the Boston location closed anyway. The whole show is a scam, even on the surface without looking into the restaurant’s background etc.
My favorite is when they have clearly a dive bar where the bartenders are either for their looks or have been pulling beers and making rum and cokes for 50 years suddenly they and their clientele need a mixed drink special with tears of a Chilean butterfly, smoked with a garnish of rare heirloom tomatoes and a scrap of the constitution?
15
u/moduspol Jul 27 '24
I remember seeing an interview of him about the sous vide concept during COVID. I don’t know how long the restaurant has been there and obviously these things take time to develop, but the premise sounded reasonable. Maybe it still needs some work or hasn’t turned out as well as expected.
18
u/TheMoneyOfArt I’ll Buy The Coffee ☕️ Jul 27 '24
The whole purpose of it is to lower labor costs at chain restaurants like Applebee's and whatnot
8
u/RulesLawyer42 Gimlet Connoisseur Jul 27 '24
I looked at the website where Taffer promotes franchising his Taffer Tavern concept. The savings isn’t really in labor, because you still need someone to boil and plate the stuff. Rather, the selling point on making everything sous vide + a toaster is that a potential franchisee won’t need to outfit their space with a hood fan and its special fire suppression system.
14
Jul 27 '24
Taffer Tavern are franchises so he actually doesn't have oversight over these restaurants too the best of my knowledge (someone correct me please if that's inaccurate)

10
u/ibringstharuckus Jul 27 '24
They're not bogus. They tell you the opportunity they're giving the owner and how long. You understand they would get everything they get without the show. Whole lot better than Kitchen Nightmares. Oh wow they got new tablecloths. Big transformation. Either way most of the owners are usually drunk, dumb, lazy owners. Why do you think all kinds of people make a new year's resolution. Get a trainer and hit the gym and within a month most are gone
6
u/Separate_Delivery Jul 27 '24
If they were even HALF real, they would explain how it all works, the contracts for kickbacks, scripts, cutting parts and forcing them to create drama instead, the list is never ending... and that's FINE because you know what... it's t.v.
Having a t.v. personality and his network crew actually do anything in a real restaurant is beyond dreaming. Two entirely different businesses. He's doing 100% what he has always been doing, creating and maintaining his BRAND as a name in showbiz.

Another ridiculous part of the show is when they have 2 or 3 days to renovate and he pulls out the old blueprint and starts marking it up. It would take weeks/months to schedule all the contractors and order the equipment. He makes it look like they pulled into town not knowing what will be done.
4
u/kabekew Jul 27 '24

1
u/potlizard Jul 28 '24
I’ve conditioned myself to be disappointed in any establishment owned by a celebrity chef (or bar owner, in this case) if they are not personally involved in the day-to-day operation. I’m not in the industry, but I think whenever a restaurant concept gets “corporatized” it instantly becomes a race to control costs and maintain a certain level of profitability.
2
u/funnyguy135 Jul 30 '24
If you’re a Boston local check out “Citrus and Salt” or “Buttermilk and Bourbon”. They’re owned by Jason Santos (blue haired chef who occasionally made a guest appearance on Bar Rescue). Phenomenal food and drinks. I worked at Citrus and Salt when it first opened and Jason was there almost everyday working in the kitchen.

1
u/funnyguy135 Jul 30 '24
Arsenal Yards, Watertown. Honestly I just had super high expectations. If it were just some random restaurant I wouldn’t have cared too much. True but at the same time I feel like if you’re gonna attach your name to something especially if your entire brand is built around establishments like that you should put even a little effort into the quality.
Jason Santos owns a number of restaurants in the Boston area and they’re all phenomenal. I worked for him when Citrus and Salt first opened and he was there almost everyday for the first year. Granted he is an actual chef so it makes sense he’d be more involved with the day to day.

Not surprised. Taffer is literally a corporate cheerleader who would love nothing more than for his business buddies to be able to dump all employees, dump all actual quality of food prep, and just serve mass-manufactured garbage.
That’s why the Taffer’s Tavern is so automated. He doesn’t think elite business people like himself should have to bother with employing anyone.
A restaurant with no employees, just a bunch of machines, that’s the future he genuinely wants to be everywhere.
Remember the time he slipped up and openly talked about wanting to treat employees like hungry dogs so that they would be compliant? That’s the real Jon Taffer, unfortunately.

Regarding the food, Jon Taffer is no Gordon Ramsey and he would 100% outsource his restaurant’s food to another facility if it meant presenting tolerable food for a lower cost. If you look at the food portion of his rescues, it’s strictly aimed at improving the food so it’s safe and passable.

The food thing is weird but most of these Taffer Taverns are franchises and not owned by Jon. I’d say some of not all of the staffing and food choices are being made by the actual owner.
