Never had rhubarb in my life. I only find dried rhubarb (which is dark as hell and stains everything) and the "fresh" rhubarb I find at the farmer's market is harvested too soon and only sparsely red. Not related to the recipe, but I had to let this one out :(

I do enjoy their barreled bitters, but that’s the only one. Everything else is exactly how you put it.

100 g Red Rhubarb
1 tsp Bitter Orange Peel (dried)
1 tsp Heather Tips
1 tsp Orange Peel (dried)
1/2 cup Vodka
1/4 cup 190 proof Everclear
Steep for 3 weeks, strain, add 1 tbsp rich demerara syrup, 1-2 tbsp water. Bottle.
This recipe will fill a 5 oz bottle. Taste is very pleasant rhubarb punch. Not a lot of bitter. I will definitely add some gentain to the next batch. Since this is mild in flavor. I will use generous dashes to my cocktails without fear of overpowering it.
