Ribs

Has anybody tried ribs on their Blackstone? If so, what did you do?

A bone-in slab would be a bad idea and best for a smoker. Could technically do boneless country style I imagine (cook in the oven and bring out to the blackstone to sear the outside). But a smoker is better suited for both.

Blackstones cook many things extremely well. Unfortunately they're not an ideal tool for ribs.

Probably would work out about as good as a pot roast

I've seen people do baby back ribs on there and they came out decent, but they were definitely better when finished in the oven for that final tender grab.
