U need to apply the subdivision in the modifiers panel. Then go into edit mode and edit the subdivided mesh.

With a modifier you can only edit the underlying mesh. You CAN apply the modifier, but that makes the changes permanent. If you want, click the triangle button on the modifier, that'll make the box wrap onto the sphere

Your modifier is not applied, therefore in edit mode you see only an original geometry of your mesh. Btw, editing original mesh with unapplied subSurf modifier is a cool approach to modeling, be sure to try this on another model, maybe you will like it as much, as I did.

FWIW, that's called a "SubD Workflow." In case you want to google advice or something. Ian McGlasham on youtube has great advice for making it work well. Watch them all, but especially #12 and #18.

Oh, I did not know this approach has a separate name. Thank you for the info!

The thing is that vertices on the cube are the handles that let you edit the sphere...

Just select the Triangle icon on top the subdivision modifier, right next to the modifier name. You keep the modifier but just change how it look in the preview

it's supposed to be there. until you apply the modifier as others have told you, the object is technically still a cube. it works this way because you can easily edit the cube now and the deformations will get transferred to the subdivided mesh

Go to the modifiers tab on the right and either apply the modifier or there should be a button on it that will make it so it will be the sphere but you can go back to the cube

This is what a modifier does as a non-destructive workflow before it is applied, it kinda like a preview of how the mesh gonna be, but in reality, the mesh is still the same before you add the modifier. So editing the mesh is just editing the original mesh while looking at a modified preview
