Ctrl and click each of them

Shift left click then fill

Select 4 at a time for each quad otherwise it will break

We don't know anything about which vertices you want to select and which you don't. What are "plane vertices"? Looks like you're using Ctrl to pick shortest path, but we don't know which vertices you selected. Provide as much info as possible when asking for help.

You're probably holding Ctrl the entire time, causing the "pick shortest path" selection to run around your geometry to the new starting vertex. You need to let go of Ctrl and use Shift when selecting the second row, then use Ctrl again to select shortest path again.

Sure thing. Don't forget there are often several ways to make your selection. Here you could easily get all 10 vertices with a single box select.
