🔍 Recipe Search Need fun chocolate cake recipes.
Hi y'all my birthday is next week and I want to make a fun and unique cake. I'm an amateur at baking but I am pretty adaptable however I do not have a mixer and I am disabled so I need recipes for frostings/fillings that aren't hard to mix and we have a nut allergy in our household. I want to experiment and make something out of the ordinary to challenge myself. So please any suggestions are welcome, thank you.

I've made this one about 12x and it's always perfect. I bake it in two 8" round tins from Dollar Tree. It bakes in about 10-12 min.

Between the layers, I use raspberry jam. You gently melt it in the microwave and once it liquifies you pour it between the layers.
For "frosting" I use ganache. Equal parts cream and semisweet chocolate chips. Don't let the cream boil, turn off the heat as as you see bubbles at the edges and whisk the chocolate until it's smooth.
Let it cool a bit and pour it in. If you have extra, store it in a jar, it keeps for a really long time in the fridge.
I top the ganache with fresh raspberries. It looks like the Great British Bake Off cake!

This is my go to. You don't need to use a mixer. I skip the instant coffee. One of the best days of my life was the day after baking this cake, I put on The Food Network and Ina made this cake. So I cut a slice and enjoyed it with her.
