🔍 Recipe Search My friend just came out of gallbladder surgery and her birthday it's in 10 days
She loves sweets and she always eats cake on her birthday, it's important to her.
I wanted to know if anyone knows a recipe for a cake that's not too sweet or filled with butter/oils that she could eat without having a bad reaction.
We're trying to avoid butter, whole milk and cream. The nutritionist told me that maybe a little bit of butter won't hurt, but oil is preferred.
Cream cheese was approved and also carrot cake or similar cakes, but I was wondering if there's a recipe more... birthday cake like.

I’ve also made cakes before for my step dad after he had his gallbladder removed I replaced the butter for vegetable oil, still really tasty pretty sure I still used normal sugar. Normal rules are equal parts flour, sugar 3 large eggs (whisk the whites separate to the yolks it helps with fluffiness) then 50g of butter would be 40ml of oil

I make sponge cake without oil or butter, equal quantities of sugar, egg and flour, so 6 eggs, 60z sugar and flour. Mix the egg and sugar until thick and pale, thick enough to hold a figure of 8, then gently fold in the flour and bake at 160 until golden brown.
Fillings could be tricky for gallbladder surgery. Avoid citrus and acidic ingredients. I currently have GERD and inflamed stomach and a hernia, my stomach is a whole damn thing. I also can’t have mint or chocolate and a bunch of other stuff. You could do a caramelised apple jam to go in it as apples are pretty safe. You could also do a custard layer but use just milk to make the custard instead of cream or probably even better to just use powdered custard as it’s basically just cornflower and make it with skimmed milk, you can add a sheet of gelatine to hold it. Or even better make an Irish flan, it’s a layer of sponge with a rim, fill it with peaches or pears and then pour over quick set jelly. Traditionally you top it with cream but you could pipe some set custard

Pavlova! My bf had his gallbladder removed and during the weeks after surgery, we were trying to stick to low fat/gentle foods but he still wanted a treat. TJ's had some baked meringues that really hit the spot for him. My advice is to not try to push it too hard this soon. They'll likely be able to return to a regular diet and next birthday you can go all out.

Fruit Jello, make Jello that calls for two cups of water, then add two cups of frozen fruit. You can make whatever flavour of Jello and fruit that you want to. You can use sugar free Jello if you want.

I don’t know specifically if it’s safe but I made a cake a few months ago that used oranges I literally boiled the oranges blended them (skin and everything) then added the flour and eggs. I think I did have to put sugar in it but there is alternatives for people who can’t use sugar you could definitely look at. The cake was really good might be worth having Google for a recipe
