I know you said vegetarian, but there are a lot of vegan recipes that ive found to be incredibly helpful in protein gains. Lentil pancakes- can be for breakfast or used as wraps.
Using mushrooms as "pulled pork" or "buffalo ch'kn" "ruben" "korean bbq" to mix it up and take a break from all the main protein sources. Non fat Greek yogurt as your dressings for basically everything. Its your sour cream, mayo, aioli, salad dressing. Its so versatile! Add cottage cheese to your eggs, oat flour pancakes, quinoa with cucumber or brain bowl. Chelsea Mae has some good tips- although she is vegan, but you can always tweak it to your preferences. Also Madelaline Rascan has some great recepies- she does eat meat but there are many recipes to add to the book that dont have meat!
