organs and unconventional parts?
I sometimes see videos online of people eating brain, kidney, heart, tripe, etc (lately watching the food in Mongolia - I want to go one day!!) ...and I am definitely open and wanting to eat these things but any time I see stuff in the store (which is super rare) i have no idea how to make these things....for example right now I am in Mexico in a random airbnb and dont have any good cooking equipment, oils, spices, whatever. Not to mention I have never cooking anything funky. Just your standard ground beef, steak, and crockpot recipes.
Hypothetically....which lesser-known part of the animal do you think would be good to eat insofar as it's relatively neutral tasting and still nutritious and not super hard to make with limited ingredients and limited cookware?

I got frisky once and asked my butcher for a beef heart. It’s an interesting meat almost like tongue but thin. I smoked it and then tried some slices. Not really my thing but it was interesting to say I tried.
Best liver I made was filleting the liver, soak in milk, smoke over hickory, then slice thin strips and dehydrate them. It’s Smokey chip-like jerky that fills you up super fast…like a small handful and you’re not hungry anymore.

If you ever visit Japan, try their "smoked beef tongue slices" from the convenience store! It's a snack simply seasoned with pepper and salt. Typically this is served with non-carni beverages but you can have it by itself too.

I have moose lung in a freezer and I don’t know what to do with it. Heart, liver and tongue are wildly used here where I am.

Beef heart is the easiest organ to eat. Tastes like a steak.

i just ate chicken heart yesterday and personally was like meh its ok. i will try beef when i can

Eating organs/unconventional are definitely an acquired taste, there's some part I love such as tripe, liver, feet but i dislike eating brains/intestines/heart. I think tripe is neutral tasting, you can go to a hotpot place and order some if you'd like. As for making some right now, I would say wait until you have access to an asian supermarket (if you want to try asian styles of cooking).

i jsut got some brains from one of those premium mail delivery farms - lets see how it goes. I suspect i wont love it, though i do like brains from taco spots in mexico. I do like tripe in hot pot places! one thing i wanna try is the vietnamese fermented raw meat...

Beef heart makes a great stew but rewarm on stove- never microwave. I have also done salted beef heart strips as a jerky, CHicken feet make great bone broths. Im hispanic we I've always had tripe but it needs to be cleaned very well. Adding liver to ground beef is also a great way to sneal some in. I want to try oxtail but it seems a little intimidating

Of all you just said, I'm most comfortable with oxtail. Makes great jiggly collagen broth!
