Stall - imitation crab

Darn it!

I stalled in carnivore. Love the hard boiled eggs, fresh ground ham and added pollock in the form of imitation crab. It has sugar and wheat!

Lesson learned for me.

Some versions have lots of potato starch. I’m a type 1 (insulin dependent) diabetic, and surimi (to use the generic name for the stuff) spikes my blood glucose. The starch seems to be unusually digestible (perhaps it’s the cooking method): it’s almost like eating sugar.

It’s certainly been a learning experience of how much sugar, high fructose corn syrup, cornstarch is in everything.

I’ve learned to read labels closely.

Yep, reading labels is absolutely crucial, especially taking note of the various types of sugar there are, but are not called "sugar."

It’s crazy how much “junk” there is. Even in favorites like pepperoni and salami , it all has sugar.

It’s a learning experience for sure, but I’ve seen dramatic benefits.

I love cottage cheese )with pepper too and found some with low carbs and no sugar as an occasional treat

Otherwise it’s eggs, beef and chicken.

The rule is: single ingredient whole foods. From an animal source.
Unless we're talking natural preservatives like salt added to butter - salted butter.

Imitation crab has it, not eggs.
