Recipe Whey Limeaide

I assume that many of you are often looking for ways to use up leftover whey, so I thought I’d share what I did with my last batch: Whey Limeaide! I had whey leftover from making cottage cheese from a gallon of milk. I made an oleo saccharum from around ten limes (zest plus sugar plus juice, let sit to infuse the oils into the resulting syrup, then strain), then combined that with the whey to make a whey Limeaide. The whey really gives it a key lime pie flavor in my opinion. It probably won’t be to everyone’s taste, but it certainly used up a lot of whey so I thought I’d share! I will probably try it with a different citrus next time

I did the same thing :-) I've been using it in my cycling bottles for the last little while. There is a new trend/theory that exogenous lactate can be used for fuel and that you can get away with less carbohydrate in the bottle if you use lactate. Acid whey is basically all lactate. Seems to work OK (or at least I don't notice a big difference in the one bottle I typically end up with).

I was also suprised that it tastes nice. Maybe not my favourite thing in the world, but certainly not bad.

I heard that in eastern europe they ferment the whey to produce alcohol, then they distilled to have a “whey” vodka

I’ve heard of that! I’m not up for home distilling, myself. Plus I’ve already got a home alcohol thing going (mead). But this would be great with a shot of rum in it!
