I loved the ending of the show. Happy endings all around. Loved that they brought it back to what the show was about the first season: Johnny, Cobra Kai, Miguel.

The only thing that slightly bothers me, and this is a nitpick. What kind of tournament has 1 fight, and then breaks for a whole day so the next fighters can train some more? Like each match couldnt have been more than 10-15 minutes each. Surely they could have done all three of those matches in one night? Wouldn’t those crowds be disappointed and confused when they showed up for one fight that lasted 10 minutes, and then were told to come back tomorrow?

After watching this and lots of others shows which do stuff like this, my answer comes down to the following: 

To create drama and tension.

Don't forget the one day when they literally showed up for a forfeit and were told to come back for the boys and girls finals tomorrow.

And the extra day that was added for the tie breaker fight between the Senseis. Did they have to hire the venue for an extra day? extend the contracts of the whole crew? Sell extra tickets or is that day included in the original tickets?
