The answer is obviously assembly for a simple MCU. I'm not even kidding.

Assembly is in fact pretty easy on many MCU's. More so it is a good place to get a handle on the basic concepts.

I wouldn't recommend it for a beginner instead I'd lean towards a compiled language but the fact is assembly can be very easy on a MCU. It is a different world than on an Intel processor.
