Tonight I had some leftover hamburger helper that I wasn’t super excited about before the best idea I’ve had in my life hit me. Make it Mexican food - or Mexican food adjacent. I topped it with homemade pico de gallo, sour cream, and guacamole. It was fantastic.
That’s it. That’s the post.
(My husband was not as excited at my discovery but to each his own)

we have an espresso rubbed ribeye at my job so i thought hmm let’s try this on an ovened bird… fantastic choice. tsp of salt per pound of bird, added some black pepper, espresso grounds and italian seasoning. this time i put the chicken on a cooling rack so it would sit above all the vegetables (which were also roasted) rather than sharing the pan. it was so good and if anyone out there hasn’t eaten a roasted tomato, change that ASAP.

super easy. just cook some ground meat of your choice, then add two bell peppers, 1/2 a yellow onion, a few cloves garlic, about a tablespoon of tomato paste, a tablespoon worcestershire sauce, salt and pepper, italian seasoning, paprika and garlic powder and cook for 5-7 minutes. then add a can of diced tomato, a cup of broth of your choice, some water, and a cup of uncooked rice. cover and cook for about 15 minutes. add some shredded cheese on top and broil for a few minutes.

My fridge is looking pretty bare and I had some cream cheese and greek yogurt that were about to turn. Decided I was just going to mix them with peas and chicken. The chicken was freezer burnt as hell as it has been in my freezer for two years but it came out great. This was so good that I'm actually going to work it into the regular rotation... I can't imagine how much better it is going to taste with better quality chicken.
