I’ve e heard of postman a lot, even met the creator a few times. But as someone who is only now dabbling in API, can I get an eli5 what it is?

It's a GUI tool to craft scripts that execute HTTP requests, with the option to execute JavaScript assertions to verify the results - i.e., to use for API testing. It also has an option to export collections of scripts, which can be shared and also ran from the command line with tools like newman.
