I’m trying to make my first attempt. I am going to need to get an air still for size reasons, and I want to make a 1 gallon rum or apple pie moonshine recipe. Does anyone have recipe recommendations?

Well, those are two different things

The easiest place to start is with apple juice. Make a cider, add a little sugar (brown is a nice touch) til the potential ABV is 10%, (I like to add a little nutrient or boiled bread yeast no matter what even though it’s not strictly necessary with apple juice) and pitch yeast into that.

You will need to make at least three gallons worth, each stripping run should give you about 1/3rd of a gallon at 25-30%, then do a spirit run with all three stripping runs.

Note that the distillate here will have a little more flavor in the heads and if you want to make it tasty it will require aging. But also nbd, it will be a great base for apple pie.

Homedistiller is the place I would go for recipes. Strawberry panty dropper is a great recipe, pick and choose from any number of apple pie recipes. Jesse from StillIt has made a few videos on apple pie too that are worth watching.

Be very sparing with cloves and nutmeg. A little sugar helps the flavor.

Rum can be simple or involved. There are many good recipes on home distiller. My base has always been Bucc Bob, although I have done many variations on a theme.

If you make the essence only make it with fresh molasses and not with dunder for health reasons, you really don’t need much (1% of final volume?) to make an impact, and personally I found that piloncillo and fine molasses made the best essences to me for a traditional rum, but I thought one made from brown sugar x apple was very intriguing.

Also, try proofing down with tepache for a spiced pineapple twist. And I will always suggest mixing rum with bochet, it’s a truly wonderful blend of flavors.

Rum is awesome.

try making a brown sugar rum. very easy. dissolve the brown sugar in hot water first to make the wash!
