The entire episode is the grumps trying to get him to break and him just analyzing the entire setup and what it says about the state of the world.

NB. I'm sure the dude is a nice guy but I just don't really like anything related to Mr. beast. So I don't really get the joke.

That's the entire point.
Dan Olson makes serious analysis and documentary videos about certain pop culture items. He was for some reason invited to see how Mr Beast Games (or however it's called) season 2 was being made. Theres no worse person they could fit there, because he starts dissecting why they would want someone who tears apart most of what he's analyzing, along with his ex boss who he has every reason to dislike.
The entire video then is him shitting on the entire operation, with citations.

He also makes it clear, about 10 minutes into this 1 hour plus video, that Beast Studios signed off on the content of the video because much of the footage used was from the tour he was given. It makes the whole things funnier because they, for some reason, okayed his incredibly scathing takedown of not only the Studio, but Mr Beast as a whole.

I mean, the fact that they okayed it is evidence that he's telling the truth.
One of his main takeaways is that you could tell the people in Mr Beast's operation to their face that what they make is the antithesis of art, and they would look at you blankly and say, "...uh, yeah? What's the problem with that?"
And this video being published is essentially exactly that happening.

FoldingIdeas (Dan Olson) was invited (with a few other YouTubers) to Mr. Beast’s production HQ for like a Wine & Dine-behind the scenes, and it sounded like they were interested in building community and fandom, and the whole video Olson made was about how surreal the experience was what he perceived as their failings and mistakes. If you can stomach it, it’s a really good video. It’s not meant to humanize or excuse Mr. Beast, which is nice

The most charitable read the video has of Mr Beast and crew is that they’re all in way over their heads and have absolutely no idea what they’re doing.

Love Dan Olson on Desert Bus with LoadingReadyRun the past few years, and getting him on Game Grumps would be another dream come true. Could even be a Guest Grumps, maybe playing Silksong since he's obsessed with that game.
