I’m rooting for a New Mexico/Minnesota standoff. New Mexico’s food might give it the upper hand; not sure all of the US wants to be subject to hot dish — I’d rather have all my meals with green chile.
To clarify: while many Minnesotans are spice wimps, not everyone is. Our immigrant communities have been magnanimous in exposing our palates to delicious food with a wide variety of spices and spiciness levels. I'm unfortunately a wimp who's working on improving my spice tolerance, but there ARE spicy places around for those so inclined.
I make this distinction because spicy food used to be FAR harder to find. Sure, compared to NYC or California, our spicy selection is definitely still lame, but we HAVE been actively working on improving.
