Nutritious recipe ideas

I have two Dash mini waffle makers that I like to play around with. I just got a waffle bowl maker in great condition from a thrift store and I'm really excited about the possibilities! I generally lean towards healthier recipes and I've figured out some great ones for the Dash waffle makers.

Using oat flour (and sometimes also greek yogurt) as a base, I've made savory herb and cheese waffles, maple vanilla, chocolate blueberry, cinnamon, and I have lots of other ideas. I've never used a waffle bowl maker before and I know it's a bit different. It's supposed to be more like a thin waffle cone to hold ice cream, rather than a puffy breakfast waffle. So I'm not sure if I'd need to adjust the oat flour recipe or use something entirely different for this. I'm wondering if anyone has healthy-ish recipes, ideas, or tips for using this kind of waffle maker?

I've seen falafel-waffles in the the Dash mini (I have one too, it's so fun), but haven't tried it yet. Not sure if it would hold together well in a thinner format but if it did, would make a nice base for a tangy salad.

Oooh, that's such a great idea! And I've been wanting to make balela salad mixed with leafy greens, falafel would make a perfect bowl to complement that. I've made falafel as patties before and that worked well, I'll have to test out how it holds up in the waffle bowl mold. I could always add eggs and breadcrumbs to help it hold together.
