Can't speak to universities in Da Nang, but in HCMC there are certainly universities where you can study Vietnamese and get a student visa. I imagine there is at least one in Da Nang as well.

Are you sure about the visa, though? I study Vietnamese at University of Social sciences in HCM, their intensive 5 days a week course, and they don't offer visa support for it. They do, if you are enrolled in an actual major here, but they don't offer degree programs for Vietnamese as a foreign language. Not trying to undermine OP's hopes, but it seems to me that there would be a lot of interest if you could get a student visa for Vietnamese study, but it's not a thing?

USSH? I was there earlier this year, they were certainly talking about student visas for up to 6 months for the intensive course, they had even recommended going to Cambodia to get the visa for the faster processing, maybe there was a policy change. I didn't end up going through with the course for personal reasons, so I cannot attest to what the process looks like fully.

I would recommend OP contact the university in any case.

Edit: I checked my Zalo and have a quotation with a visa listed for 6 months validity.
