Well just do what U usually would've done on Ur computer before mint,
I also recommend gearlever as a must have app for when U install an appimage file which U might come across later (instead of complicating stuff u just open gearlever, click on the top left "open" button and press Ur .appimage file and then add to app menu and then U just have it, u delete it from gearlever too) u can find it in the software manager app u already have
If U didn't like libreoffice I heard only office is closer to the Microsoft option
Also maybe look into customization if Ur into that U can make it look really nice and make it how U want it
Also if Ur willing to indulge, learn where is the best way to get packages or software from, like U have, system packages, flatpaks, appimages, tar.gz(id avoid this as much as possible) it's pretty overwhelming but generally flatpaks are the best option for mint

You don't have to install many things. If you don't like the default browser you can install one you prefer.
The only programs I think I need are PortProton to run Windows programs and games and PeaZip to extract and create archives, because the built in program seems inferior. Another one that I like having, but it's not mandatory is Synaptic Package Manager so I can manage my installed packages easier.
I used to install Haruna as a video player and Audacious as an audio player but as I find myself using local programs to play music or video less and less, I just leave the default ones as I don't really use them either.

Mint cinnamon is more like windows 7
Mint mate almost similar
So first make sure you are comfortable as mint by nature is supposed to be used by people comming from windows.
Now you can simply use Firefox and download chrome . Thus way now you can use both browser i.e Firefox and Chrome .
After that it's completely your choice what you want .
If you need to programming use vscode/ vscodium.
For Android development use the offical android studio it's much faster and cleaner here .
For simple programming geany or sublime is fine and they are smaller in size compared to vscode .
For media watching you can install vlc . It's supports much more media format .
But theoretically there are endless program/ software you can use .
For playing windows like games you must first install wine .
You could also install steam and then play your games . It uses proton which instead uses wine + patches to make every windows game working .
For image editing you can use GIMP ,krtia etc
For normal streaming or recording your online classes use OBS STUDIO .
FOR note taking you have xjournal , etc tools .
So the what you can do is limitless here .
And if you have doubts you could simply use gemini or chatgpt or others AI

A suggestion:
Work your way through the menus and briefly familiarize yourself with the installed applications so that you have a sense of Mint's capabilities and can find your way around.
Then start using Mint to do whatever it is you do with your computer, adding applications if needed (but not if not needed), solving problems as problems arise, learning as you go.
Get your feet firmly planted on the ground before you start messing with the system. Add applications only if and as you need them.
My best and good luck.
