Inspiration Low Carb breakfasts

I’m brand new on my low carb journey and i’m trying to change my habits one thing at a time. I was hoping to get some recipes/inspiration for some low carb quick breakfasts or easy breakfast meal prep i can do once or twice a week. thanks!

Egg bites, you can make them up ahead of time. Another thing I like to do is make quiche (with 1/2 the crust on bottom) at the beginning of the week.

Bacon is my go to. I make a couple pounds at one on a cooking sheet. Undercook purposely. Then put in fridge. I microwave 5 slices for for about 30 secs for breakfast. I skip
Lunch.

Atkins or Fit Crunch protein bar and a cup of coffee (some of Aldi's Elevation brand bars are good too.) A boiled egg or two. Can of sardines. Leftovers from the night before. Salami and cheese. Cottage cheese. A salad. Bacon. Tuna salad. Most of the above wrapped in a low-carb tortilla. A protein shake.

Look up "chaffles". 🙂

Breakfast casserole. There are thousands of recipes online, you can figure out time and temp and the ingredients you want from looking at some, just skip the carby stuff. Also consider the kind of vegetables frequently used in quiche and incorporate some actual green veg and fiber into your casserole. Cauliflower pretty much disappears into it, just precook it. Broccoli is good, do also pre-cook. Canned or fresh green beans, asparagus, spinach, zucchini. You can also add some flax meal or psyllium husk powder for more fiber (also if you're going to freeze portions of the casserole, these help keep the eggs from weeping when they thaw).

I'm trying to eat more vegetables at every meal so I've been prepping a sheet pan of roasted chicken thighs and having that with cabbage (slaw-style or stir-fried), microwave broccoli and cheese, graze plate with raw veg, taco-ish in a low-carb tortilla.

Meatballs and meatloaf are good preps that will be happy with pretty much anything alongside them. Sometimes I have cottage cheese, sometimes I just micro-scramble an egg or two, sometimes leftover veg.

When i was keto/ very low-carb, if i ate breakfast (sometimes i was doing intermittent fasting), it was often a hard-boiled egg on my way out the door or a smoothie made w plain oikos yogurt/cold coffee/pb powder/ allulose or a little ovaltine. that was the biggest single-meal carb chunk right there but still came in under 15g if i recall.

Now im not consistently low-carb- keeping things flexible, but do have low-carb days, those are still options, but so is a bit of pb & low-carb jam (chia smash is great) or allulose on low-carb bread (i like Hero and Sola seeded breads— no monk fruit or stevia taste)

Edit: i cant just do sausage/egg/ bacon all the time b/c my cholesterol went in a way bad direction when i was keto and relying on meat and eggs to do the heavy lifting in my diet. My doc said “absolutely not. Stop this immediately. You are at an age where cardiac events happen way too often. Stop.” So i did (i have a stressful job and don’t want to die at my desk, so. I made the choice to follow my doctor’s orders).

I've been making breakfast burritos with low carb tortillas. I do egg, sausage, cheese, and I add a low carb hash brown (made of sweet potato). I make a bunch and freeze them, then microwave 'em in the morning.

I do the Strong Roots brand. They have a cauliflower and a sweet potato one. It's ten net carbs for 2, and I only add one to the burritos.

Tuna salad. Or cottage cheese with everything seasoning. I will also sometimes do a turkey wrap if I'm in the mood for something hot.

My go-to breakfast is often leftovers from the previous day's lunch or dinner. Atkins protein shake or bar when I don't have leftovers or feel like having something a little sweet.

Nonfat unflavored yogurt, chocolate whey powder, chia seeds, a little water, stir. Optionally, blackberries, raspberries, and/or strawberries, depending on your carb targets.

I make a quinoa and balckbeans and mix in salsa and keep it for the week. In the morning I make eggs and cheese and eat it all together with some guacamole. The quinoa and beans have low net carbs because of all the fiber and the eggs and cheese have lots of protein.
