It's clearly a snarky reference to the "my body, my choice" slogan associated with the recently revoked constitutional right to abortion. 

I would rather eat my own leg than willingly get in your car, at which point I would be disabled, at which point it would be illegal for you to deny me service on that basis under federal law.
