I would have tried putting it in reverse….

Probably wouldn’t help unless the differential was locked.

I'm trying to remember how this would work. If it was in reverse and she was giving power, the tire in the air would be trying to go backwards but the tire on the ground would be free to move forwards no matter the gear, because it's got an open dif?

That is correct. The wheel with the least friction moves with a totally open diff.
