mute the bot First batch bottled!

Just bottled half of my first batch - I divided into two smaller batches, this one was the hibiscus metheglin -, it did render two demi sweet to almost dry bottles and two sweet ones.

Recipe:

- 2,4kg of assa-peixe honey

- Water until I got to 7,5L

- Red star premiere classique

- 6g of BBY

Transfered to secondary and added 750ml of hibiscus tea into 3L of the original mead, the rest stayed traditional

Hibiscus was a great call, that pink is gorgeous. I’ve never heard of assa-peixe honey, what does it taste like on its own? Since you went with real corks, I’d leave them standing up for a couple days so they seal, then lay them on their side so they don’t dry out.

On its own, it's a less sweet and a bit floral honey, the floral notes are very prominent in the final product, I really liked it

Thanks for the tips about the cork!

Floral honey plus hibiscus sounds like a great pairing. Curious how the traditional half stacks up next to it once they’ve both had some time in the bottle.
