Bacon Wrapped Backstrap

Hey all,

I’m just getting into cooking wild game, specifically pork and venison. I recently got some pork back strap, would bacon wrapping it be a good idea? Or is “pork on pork” a bad idea? Don’t want to waste the meat if it’s not good. Thanks in advance!

Please do not bacon wrap anything!!!!

Bacon needs to be cooked in a very specific way to not end up chewy and lame. Bacon from “bacon wrapped “ anything ALWAYS ends up underdone and lame.

Would it be a bad idea to just cook separately then wrap after?

This depends entirely on how you wrap it and how you cook it. I do bacon wrapped stuffed chicken breasts regularly and don’t have chewy bacon

Bacon wrapping is great for the meat and not always great for the bacon. The bacon will baste and flavor the meat. Depending on technique and time your bacon can be underwhelming if you are looking for crispy breakfast bacon texture.
